Fig & Walnut Mousse



Ingredients :
  • 6 fresh figs; plus 2 for garnishing
  • 375 ml double cream
  • 1 tbsp vanilla essence
  • 2 tbsp icing sugar, sifted
  • 100 gms walnuts, chopped roughly
  • White chocolate, grated

Preparation :
  • Scoop out the flesh of the figs, and crumble with a fork
  • Whip cream, vanilla essence and sugar until it thickens
  • Add the pulped figs and walnuts to the cream and fold
  • Add dollops of the fig mousse into serving bowls
  • Garnish with a slice of fig each and grated white chocolate

Serves 4
